Oriental Fruited Rice Salad

Ingredients

1cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
2 bananas sliced
3 dried figs coarsely chopped
1/4cup diced pineapple diced
1 orange cut into segments
3Tbsp. cream
1Tbsp. curry powder
1/2tsp. paprika
3Tbsp. wine vinegar
3Tbsp. vegetable oil
1pinch salt
1/2tsp. pepper

Instructions

1. Cook rice according to package directions. In large bowl, place rice. Cover; refrigerate at least 2 hours.
2. In small bowl, combine vinegar, oil, cream, curry powder, pepper, paprika and salt; mix well. Stir into rice.
3. Slice bananas and add to.mixture, with figs pineapple, orange segments, ham and peanuts.
4. Toss lightly so the fruit stays together and doesn’t get mushy.

tips and notes
Add in toasted coconut for a crunchy texture.
