Ingredients
| 1/2 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 3 | cups milk |
| 3 | egg yolks |
| 1 | can apricots |
| 8 | Tbsp. orange curd |
| 1/2 | tsp. mixed spice |
| 2 1/3 | Tbsp. sugar |
| 4 | Tbsp. white wine |
| 4 | tsp. cointreau (optional) |
Instructions
1. Put rice and milk into a large saucepan and simmer until rice is soft and almost all the liquid is absorbed. Cool slightly.
2. Add sugar, egg yolks, 2 tablespoons orange curd and mixed spice.
3. Pour into well buttered 4 cup ring mold. Cook in oven 350F for 20 minutes, or until set.
4. Drain juice from apricots, turn out rice ring onto a serving plate and fill center with apricots.
5. In a small pan, blend remaining orange curd with wine and cointreau, if used.
6. Serve sauce over rice ring and apricots.
