Ingredients
| 1 | cup UNCLE BEN’S® Natural Whole Grain Brown Rice |
| 2 | medium bananas peeled and sliced |
| 1 | small cucumber sliced |
| 1 1/2 | Tbsp. raisins |
| 1 | Tbsp. lemon juice |
| 3 | tsp. almonds chopped |
| 3 | tsp. lemon rind grated |
| 1 | tsp. salt |
| 1 | tsp. cumin |
| 3 | Tbsp. olive oil |
| 1 | tsp. cayenne pepper |
| 1 | tsp. ground coriander |
| 1 | tsp. honey |
Instructions
1. Cook the rice according to package instructions and cool.
2. Place the cooked rice, cucumber, bananas, raisins and almonds in a salad bowl and stir well.
3. Mix together the oil, lemon juice and rind, salt, coriander, cumin, cayenne and honey in a screw-topped jar and shake well.
4. Pour the dressing over the rice mixture and mix well.
5. Chill for at least half an hour before serving.
