Nicoise Rice Salad

Ingredients

1cup UNCLE BEN’S® Natural Whole Grain Brown Rice
1can tuna drained and flaked
3 tomatoes cut into wedges
1cup green beans cooked and chilled
3stalks celery cut into strips
1head green leaf lettuce
6 anchovies chopped
1 green pepper cut into strips
3 eggs sliced
2 cloves garlic
1cup ripe olives
6 green onions cut into 1" pieces
2Tbsp. basil
1/2cup olive oil
1/4cup white wine vinegar
2 1/2cups water
2tsp. salt
1/2tsp. fresh ground pepper

Instructions

1. Cook the rice according to instructions on package using salt. Remove from heat. Let stand covered until all liquid is absorbed, about 5 minutes.
2. While rice is cooking, combine oil, vinegar, basil, pepper, garlic and the remaining 1 teaspoon salt.
3. Toss oil mixture with hot rice. Cover and chill.
4. Line salad platter with lettuce and top with rice. Arrange remaining ingredients over lettuce.

tips and notes
Drizzle oil mixture over finished salad at end.
