Ingredients
| 1 | cup UNCLE BEN’S® Natural Whole Grain Brown Rice |
| 1 | can tuna drained and flaked |
| 3 | tomatoes cut into wedges |
| 1 | cup green beans cooked and chilled |
| 3 | stalks celery cut into strips |
| 1 | head green leaf lettuce |
| 6 | anchovies chopped |
| 1 | green pepper cut into strips |
| 3 | eggs sliced |
| 2 | cloves garlic |
| 1 | cup ripe olives |
| 6 | green onions cut into 1" pieces |
| 2 | Tbsp. basil |
| 1/2 | cup olive oil |
| 1/4 | cup white wine vinegar |
| 2 1/2 | cups water |
| 2 | tsp. salt |
| 1/2 | tsp. fresh ground pepper |
Instructions
1. Cook the rice according to instructions on package using salt. Remove from heat. Let stand covered until all liquid is absorbed, about 5 minutes.
2. While rice is cooking, combine oil, vinegar, basil, pepper, garlic and the remaining 1 teaspoon salt.
3. Toss oil mixture with hot rice. Cover and chill.
4. Line salad platter with lettuce and top with rice. Arrange remaining ingredients over lettuce.
