Ingredients
| 1 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 1 | cup milk or heavy cream |
| 8 | oz. mushrooms (small) cut in half |
| 1 | medium onion finely chopped |
| 2 | Tbsp. chives chopped |
| 1/2 | tsp. chopped tarragon (optional) |
| 1 | Tbsp. parsley chopped |
| 1 | tsp. salt |
| 1 | Tbsp. flour |
| pinch cayenne pepper |
| 4 | Tbsp. butter or margarine |
Instructions
1. Cook rice according to package instructions.
2. Sauté mushrooms and onions with tarragon, chives and salt in butter over moderate heat for about 5 minutes.
3. Blend in flour, mix completely. Add cream and cook, stirring constantly until thickened.
4. Transfer cooked rice into shallow baking dish covering both the bottom and sides of the dish with rice. Spoon mushroom mixture into the center.
5. Cover and bake at 400 degrees F for 12-15 minutes. Sprinkle with parsley before serving.
