Ingredients
| 1 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 1 | lb. steak cut into 1/2" cubes |
| 1 | large tomato diced |
| 1 | medium onion cut into wedges |
| 3/4 | cup raisins |
| 1/4 | cup toasted almonds |
| 1/2 | tsp. crushed red pepper |
| 1/4 | cup sherry |
| 1/2 | tsp. salt |
| 2 | tsp. sugar |
| 2 1/2 | tsp. curry powder |
| 1/2 | tsp. paprika |
| 1 3/4 | cups reduced-sodium beef broth |
Instructions
1. Heat oven to 350°F.
2. Cut beef into 1/2-inch cubes. Combine curry, salt, red pepper and paprika in small bowl. Add beef and stir until well coated.
3. Combine beef, any remaining curry mixture, onion, broth, sherry, raisins, sugar and rice in ovenproof 2-1/2-quart covered shallow casserole; stir.
4. Cover and bake for 50 minutes or until beef is tender and most of the liquid is absorbed. Stir in tomato.
5. Sprinkle with almonds before serving.
