Moroccan Beef Curry

Ingredients

1cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
1lb. steak cut into 1/2" cubes
1large tomato diced
1medium onion cut into wedges
3/4cup raisins
1/4cup toasted almonds
1/2tsp. crushed red pepper
1/4cup sherry
1/2tsp. salt
2tsp. sugar
2 1/2tsp. curry powder
1/2tsp. paprika
1 3/4cups reduced-sodium beef broth

Instructions

1. Heat oven to 350°F.
2. Cut beef into 1/2-inch cubes. Combine curry, salt, red pepper and paprika in small bowl. Add beef and stir until well coated.
3. Combine beef, any remaining curry mixture, onion, broth, sherry, raisins, sugar and rice in ovenproof 2-1/2-quart covered shallow casserole; stir.
4. Cover and bake for 50 minutes or until beef is tender and most of the liquid is absorbed. Stir in tomato.
5. Sprinkle with almonds before serving.

tips and notes
Sear pieces of beef and brown on all sides before adding to casserole. This will enhance flavor.
