Ingredients
| 1 1/2 | cups UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 2 | lb. chicken breast halves |
| 1 | medium onion |
| 4 | oz. dried apricots |
| 4 | oz. raisins |
| 3 | Tbsp. butter |
| 1/2 | tsp. cinnamon |
| 1 | tsp. turmeric |
| 1/2 | tsp. ground cumin |
| salt to taste |
| 3 1/4 | cups water |
Instructions
1. Cook rice as instructed, adding 1/2 tsp. turmeric to the water. Drain well and keep hot. Mix cinnamon, cumin, and remaining turmeric. Add salt.
2. Rub the chicken well with the spice mixture.
3. Soak raisins and apricots in water to cover for 15 minutes.
4. Chop onion finely and fry in 2 oz. butter until golden.
5. Remove from pan with perforated spoon and set aside.
6. Fry spiced chicken in same fat until brown on all sides. Heat further 2 oz. butter in large fireproof casserole.
7. Put in half the rice, arrange chicken pieces on top.
8. Drain raisins and apricots, mix with fried onions. Spread mixture over chicken. Top with remaining rice.
9. Melt rest of butter and pour over. Fold a clean tea-towel and place beneath casserole lid. Simmer gently for 40 minutes.
10. If gas flame is difficult to control, place casserole on wire mesh mat to prevent burning.
