Middle Eastern Pilaf

Ingredients

1cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
1/2cup chopped onion
1/4cup golden raisins
1 1/2tsp. mint leaves chopped
1/3cup slivered almonds
2Tbsp. chopped parsley
1tsp. salt
1Tbsp. olive oil
1/4tsp. pepper
2 1/2cups chicken broth

Instructions

1. Cook onion in oil in medium saucepan until tender, about 5 minutes.
2. Add rice and almonds. Cook over low heat, stirring constantly, until rice is golden.
3. Add chicken broth, salt and pepper. Bring to a boil. Reduce heat. Cover tightly and simmer 20 minutes.
4. Remove from heat and stir in parsley, mint and raisins. Let stand covered until all liquid is absorbed, about 5 minutes.
