Middle Eastern Lamb and Whole Grain Brown Rice

Ingredients

2cups UNCLE BEN’S® Natural Whole Grain Brown Rice
2lb. lamb cubed
1 onion diced
2 carrots diced
1/2cup pistachio nuts
1dash allspice
1/2cup currants
2Tbsp. oil
4cups chicken broth
1/4tsp. cinnamon
1/2cup dried apricots diced
1tsp. salt
1/2tsp. black pepper

Instructions

1. Season lamb cubes with salt and pepper. In a large skillet or pot, heat the oil until it just begins to smoke, then add the lamb and sear until it browns. Add the onion, carrot, cinnamon, allspice, and rice; sauté for about 3 minutes.
2. Add the apricots, currants and nuts, sauté for 2 minutes.
3. Add the broth, bring to a boil, cover, reduce heat and cook for 30 minutes.

Be sure to sear meat on all sides before adding liquid.
