Ingredients
| 2 | cups UNCLE BEN’S® Natural Whole Grain Brown Rice |
| 2 | lb. lamb cubed |
| 1 | onion diced |
| 2 | carrots diced |
| 1/2 | cup pistachio nuts |
| 1 | dash allspice |
| 1/2 | cup currants |
| 2 | Tbsp. oil |
| 4 | cups chicken broth |
| 1/4 | tsp. cinnamon |
| 1/2 | cup dried apricots diced |
| 1 | tsp. salt |
| 1/2 | tsp. black pepper |
Instructions
1. Season lamb cubes with salt and pepper. In a large skillet or pot, heat the oil until it just begins to smoke, then add the lamb and sear until it browns. Add the onion, carrot, cinnamon, allspice, and rice; sauté for about 3 minutes.
2. Add the apricots, currants and nuts, sauté for 2 minutes.
3. Add the broth, bring to a boil, cover, reduce heat and cook for 30 minutes.
