Ingredients
| 1 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 2 1/2 | lb. chicken cut up |
| 1 | large tomato cut into wedges |
| 1 | clove garlic sliced |
| 1 | can olives drained and pitted |
| 1 | tsp. oregano |
| 1 | bay leaf |
| salt and pepper to taste |
| 2 | Tbsp. olive oil |
| 2 1/4 | cups water |
| chicken bouillon cubes crushed |
Instructions
1. Lightly brown garlic in olive oil in 12-inch skillet. Add chicken pieces; brown well. Drain fat.
2. Add water, rice, bouillon cubes, oregano and bay leaf; stir. Bring to a boil. Reduce heat, cover and simmer until chicken is tender and liquid is absorbed, about 30 minutes.
3. Salt and pepper to taste. Top with tomato wedges and, if desired, olives.
