Mediterranean Chicken Rice Skillet

Ingredients

1cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
2 1/2lb. chicken cut up
1large tomato cut into wedges
1clove garlic sliced
1can olives drained and pitted
1tsp. oregano
1 bay leaf
salt and pepper to taste
2Tbsp. olive oil
2 1/4cups water
chicken bouillon cubes crushed

Instructions

1. Lightly brown garlic in olive oil in 12-inch skillet. Add chicken pieces; brown well. Drain fat.
2. Add water, rice, bouillon cubes, oregano and bay leaf; stir. Bring to a boil. Reduce heat, cover and simmer until chicken is tender and liquid is absorbed, about 30 minutes.
3. Salt and pepper to taste. Top with tomato wedges and, if desired, olives.

tips and notes
Top with crumbled feta cheese as well for added bite. Instead of tomato wedges serve with roasted red bell pepper strips.
