Ingredients
| 2 | cups UNCLE BEN’S® Boil-In-Bag Rice |
| 4 | small chicken breast halves skinned, boned and cut |
| 1 | cup red bell peppers cut into strips |
| 1 | clove garlic minced |
| 1/3 | cup dry white wine |
| 1/2 | tsp. salt |
| 1 | Tbsp. olive oil |
| 1 | cup zucchini sliced |
| 1/4 | tsp. red pepper flakes |
| 1 1/2 | tsp. sodium-free Italian seasoning |
Instructions
1. Cook rice according to package instructions. While rice is cooking, heat oil in 10-inch skillet over medium-high heat.
2. Add chicken and garlic and salt. Cook and stir 2 minutes. Add in wine and cook until almost gone.
3. Reduce heat to medium. Stir in remaining ingredients.
4. Cover and cook over medium heat, stirring occasionally, until vegetables are crisp-tender, about 2 to 3 minutes.
5. Serve over hot, cooked rice.
