Mediterranean Chicken and Rice

Ingredients

2cups UNCLE BEN’S® Boil-In-Bag Rice
4small chicken breast halves skinned, boned and cut
1cup red bell peppers cut into strips
1clove garlic minced
1/3cup dry white wine
1/2tsp. salt
1Tbsp. olive oil
1cup zucchini sliced
1/4tsp. red pepper flakes
1 1/2tsp. sodium-free Italian seasoning

Instructions

1. Cook rice according to package instructions. While rice is cooking, heat oil in 10-inch skillet over medium-high heat.
2. Add chicken and garlic and salt. Cook and stir 2 minutes. Add in wine and cook until almost gone.
3. Reduce heat to medium. Stir in remaining ingredients.
4. Cover and cook over medium heat, stirring occasionally, until vegetables are crisp-tender, about 2 to 3 minutes.
5. Serve over hot, cooked rice.

Note: 1 lb. total chicken used for nutritional analysis.
