Margarita Chicken with Black Beans and Rice

Ingredients

1cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
4 chicken breast halves
1medium tomato
1/4cup cilantro chopped
1/4cup red onion diced
1can black beans drained and rinsed
2 garlic cloves minced
1cup margarita mix liquid
1 lime
1Tbsp. vegetable oil
3 corn cobs with kernels removed (2 cups total)
2 1/4cups water (to prepare rice)

Instructions

1. Marinate the chicken in the margarita mix.
2. Cook rice according to package instructions.
3. In a skillet, sauté the onions in the oil along with the garlic for about 2 minutes.
4. Add the corn and sauté for one minute.
5. Fold in beans, tomato, cilantro and lime; remove from heat.
6. Just before the rice has finished cooking, grill or sauté the chicken until done.
7. To serve, make a mound of rice and beans on a platter, top with sautéed vegetables and surround with chicken.

Note: 20 oz. total chicken breast and 2 cups total corn kernels were used for nutritional analysis.
