Ingredients
| 1 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 4 | chicken breast halves |
| 1 | medium tomato |
| 1/4 | cup cilantro chopped |
| 1/4 | cup red onion diced |
| 1 | can black beans drained and rinsed |
| 2 | garlic cloves minced |
| 1 | cup margarita mix liquid |
| 1 | lime |
| 1 | Tbsp. vegetable oil |
| 3 | corn cobs with kernels removed (2 cups total) |
| 2 1/4 | cups water (to prepare rice) |
Instructions
1. Marinate the chicken in the margarita mix.
2. Cook rice according to package instructions.
3. In a skillet, sauté the onions in the oil along with the garlic for about 2 minutes.
4. Add the corn and sauté for one minute.
5. Fold in beans, tomato, cilantro and lime; remove from heat.
6. Just before the rice has finished cooking, grill or sauté the chicken until done.
7. To serve, make a mound of rice and beans on a platter, top with sautéed vegetables and surround with chicken.
