Manhattan Style Fish Chowder

Ingredients

1cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
1/2lb. sole fillet in bite size pieces
1/2cup onion chopped
1large tomato coarsely chopped
1small green pepper cut into 3/4" pieces
1/2tsp. dried basil crushed
2 cloves garlic minced
1tsp. lemon juice
2cups vegetable juice cocktail
black pepper to taste

Instructions

1. Combine first 8 ingredients in medium saucepan. Bring to a boil.
2. Reduce heat. Cover and simmer 15 minutes, stirring occasionally.
3. Add rice and fish. Continue cooking until fish flakes easily with fork, about 5 minutes.
4. Sprinkle with black pepper.

You may use any fish you prefer, but white fish is suggested.
