Ingredients
| 1 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 1/2 | lb. sole fillet in bite size pieces |
| 1/2 | cup onion chopped |
| 1 | large tomato coarsely chopped |
| 1 | small green pepper cut into 3/4" pieces |
| 1/2 | tsp. dried basil crushed |
| 2 | cloves garlic minced |
| 1 | tsp. lemon juice |
| 2 | cups vegetable juice cocktail |
| black pepper to taste |
Instructions
1. Combine first 8 ingredients in medium saucepan. Bring to a boil.
2. Reduce heat. Cover and simmer 15 minutes, stirring occasionally.
3. Add rice and fish. Continue cooking until fish flakes easily with fork, about 5 minutes.
4. Sprinkle with black pepper.
