Ingredients
| 2 | cups UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 2 | lb. shrimp |
| 2 | cups onion chopped |
| 1 | cup green pepper chopped |
| 2 | Tbsp. parsley chopped |
| 4 | cloves garlic minced |
| 2 | quarts water |
| 2 | tsp. salt |
| 4 | Tbsp. flour |
| 1 | cup celery chopped |
| 2 | tsp. black pepper |
| 6 | Tbsp. olive oil |
| 1 | bay leaf |
Instructions
1. Cook rice according to package instructions.
2. Meanwhile, heat oil in heavy skillet; add flour. Brown thoroughly, stirring constantly.
3. Add vegetables and garlic and cook until soft, about 25 minutes. Place cleaned shrimp and 2 quarts water in 1-gallon saucepan.
4. Add salt, pepper, and bay leaf and then add flour-vegetable mixture. Simmer for 1 hour.
5. Add parsley in last 10 minutes of cooking time.
6. Serve over rice.
