Louisiana Shrimp

Ingredients

2cups UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
2lb. shrimp
2cups onion chopped
1cup green pepper chopped
2Tbsp. parsley chopped
4cloves garlic minced
2quarts water
2tsp. salt
4Tbsp. flour
1cup celery chopped
2tsp. black pepper
6Tbsp. olive oil
1 bay leaf

Instructions

1. Cook rice according to package instructions.
2. Meanwhile, heat oil in heavy skillet; add flour. Brown thoroughly, stirring constantly.
3. Add vegetables and garlic and cook until soft, about 25 minutes. Place cleaned shrimp and 2 quarts water in 1-gallon saucepan.
4. Add salt, pepper, and bay leaf and then add flour-vegetable mixture. Simmer for 1 hour.
5. Add parsley in last 10 minutes of cooking time.
6. Serve over rice.
