Ingredients
| 1 | package UNCLE BEN’S® Long Grain & Wild Rice Original Recipe |
| 1 | cup cooked chicken or turkey chopped |
| 1 | cup chopped onion |
| 1/2 | cup carrots peeled and finely chopped |
| 4 | cups canned fat-free (or homemade) chicken stock |
| 2 | Tbsp. all-purpose flour |
| 3 | Tbsp. sherry |
Instructions
1. Cook rice according to package instructions, set aside.
2. In a large pot coated with nonstick cooking spray, sauté the onion and carrots over medium heat until tender, about 5 minutes. Add in the sherry and combine with the vegetables, cook until the liquid is gone.
3. Stir in the flour until it has coated the vegetables evenly. Gradually add the broth and bring to a boil.
4. Add in the chicken and rice then stir until well combined. Let simmer 5 minutes or until chicken is warm.
5. Season with salt and pepper as desired.
6. Serve.
