Ingredients

2cups UNCLE BEN’S® Boil-In-Bag Rice
1/2lb shrimp, peeled, de-veined
1 1/2Tbsp. fresh lemon juice
1 1/2tsp. ginger, fresh finely shredded
1 1/2tsp. lemon peel
1clove garlic minced
1/3cup chicken broth
2Tbsp. vegetable oil
1 1/2tsp. sugar
3 green onions with tops cut into thin strips

Instructions

1. Cook rice according to package instructions. While rice is cooking, heat oil in 10-inch skillet over medium-high heat until hot but not smoking.
2. Add shrimp and garlic. Cook and stir 1 to 2 minutes.
3. Add broth, lemon peel, lemon juice, ginger and sugar. Reduce heat to medium. Cook and stir until shrimp are cooked through, 2 to 3 minutes.
4. Stir in green onion.
5. Serve over cooked rice.
