Ingredients
| 2 | cups UNCLE BEN’S® Boil-In-Bag Rice |
| 1/2 | lb shrimp, peeled, de-veined |
| 1 1/2 | Tbsp. fresh lemon juice |
| 1 1/2 | tsp. ginger, fresh finely shredded |
| 1 1/2 | tsp. lemon peel |
| 1 | clove garlic minced |
| 1/3 | cup chicken broth |
| 2 | Tbsp. vegetable oil |
| 1 1/2 | tsp. sugar |
| 3 | green onions with tops cut into thin strips |
Instructions
1. Cook rice according to package instructions. While rice is cooking, heat oil in 10-inch skillet over medium-high heat until hot but not smoking.
2. Add shrimp and garlic. Cook and stir 1 to 2 minutes.
3. Add broth, lemon peel, lemon juice, ginger and sugar. Reduce heat to medium. Cook and stir until shrimp are cooked through, 2 to 3 minutes.
4. Stir in green onion.
5. Serve over cooked rice.
