Lemon Salmon with Spinach Tomatoes and Rice

Ingredients

1cup UNCLE BEN’S® Instant Rice
12oz. salmon fillets
2cups fresh tomatoes chopped
1 1/4lb. frozen spinach thawed and drained
2tsp. garlic minced
1tsp. lemon zest
2tsp. olive oil
salt and pepper as needed

Instructions

1. Cook the rice according to package instructions and keep warm.
2. Season the salmon with the salt and pepper and sauté in the oil until done. Set aside.
3. In the same skillet, sauté the tomatoes, garlic, lemon zest and spinach.
4. On a bed of the rice, place a piece of salmon and spoon tomato mixture over it.

tips and notes
Be careful not to overcook the salmon, it should flake off easily with a fork and be moist
