Ingredients
| 1 | cup UNCLE BEN’S® Instant Rice |
| 12 | oz. salmon fillets |
| 2 | cups fresh tomatoes chopped |
| 1 1/4 | lb. frozen spinach thawed and drained |
| 2 | tsp. garlic minced |
| 1 | tsp. lemon zest |
| 2 | tsp. olive oil |
| salt and pepper as needed |
Instructions
1. Cook the rice according to package instructions and keep warm.
2. Season the salmon with the salt and pepper and sauté in the oil until done. Set aside.
3. In the same skillet, sauté the tomatoes, garlic, lemon zest and spinach.
4. On a bed of the rice, place a piece of salmon and spoon tomato mixture over it.
