Ingredients
| 1 | box UNCLE BEN’S® Long Grain & Wild Rice Original Recipe |
| 1 | whole chicken (3-1/2 to 4 lbs.) cut into 8 pieces |
| 1 | medium ripe tomato diced |
| 2 | Tbsp. lemon juice |
| 2 | Tbsp. olive oil |
| 2 1/2 | cups chicken stock |
| 1 | can sliced black olives (6-ounce) |
Instructions
1. Brown chicken pieces in olive oil over medium heat, browning well on all sides.
2. Add all remaining ingredients to the pan.
3. Bring to a boil, reduce heat to low, cover, and simmer 20 minutes or until all liquid is absorbed and rice is tender.
