Ingredients

1box UNCLE BEN’S® Long Grain & Wild Rice Original Recipe
1whole chicken (3-1/2 to 4 lbs.) cut into 8 pieces
1medium ripe tomato diced
2Tbsp. lemon juice
2Tbsp. olive oil
2 1/2cups chicken stock
1can sliced black olives (6-ounce)

Instructions

1. Brown chicken pieces in olive oil over medium heat, browning well on all sides.
2. Add all remaining ingredients to the pan.
3. Bring to a boil, reduce heat to low, cover, and simmer 20 minutes or until all liquid is absorbed and rice is tender.
