Ingredients
| 1 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 2 | lbs. sole fillet(s) |
| 1/4 | cup lemon juice |
| 1/4 | cup green onions chopped |
| 2 | Tbsp. almonds sliced |
| 1 1/2 | Tbsp. butter melted |
| 1 | lemon thinly sliced |
| paprika |
| 1 | tsp. salt |
| 2 1/4 | cups water |
Garnish with fresh chopped parsley. Try adding some white wine to baking dish to help keep it moist and for added flavor.

Instructions
1. Bring water and lemon juice to a boil in medium saucepan. Stir in rice, salt and nutmeg. Cover tightly and simmer 20 minutes.
2. Remove from heat. Let stand covered until all liquid is absorbed, about 5 minutes.
3. Stir in green onions. Spoon rice into 13x9x2-inch baking dish. Arrange fish over rice; sprinkle lightly with paprika.
4. Drizzle fish with butter, top with lemon slices and sprinkle with almonds. Cover loosely with aluminum foil.
5. Bake at 400 F, 12 to 15 minutes or until fish flakes when tested with a fork.
