Lamb Kebabs

Ingredients

1cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
2lb. leg of lamb cubed
2medium onions
2tsp. marjoram
lemon juice
1/4cup olive oil
2 bay leaves
salt and pepper

Instructions

1. Cook rice according to package instructions.
1. Cut the lamb into 1 1/2 in. pieces. Cut the onion lengthwise into thick slices
2. Break the bay leaves into small pieces.
3. Prepare the marinade; in a deep bowl combine the olive oil, lemon juice, sliced onions, bay leaves, marjoram, and season with salt and black pepper.
4. Add the lamb pieces and marinate for 6-8 hr, turning once or twice.
5. Remove from the marinade and thread the meat and onions on skewers.
6. Grill the kebabs on all sides for 10-15 minutes, depending on type of grill. They need a high heat and should be crisp and brown on the outside and pink inside.
7. Baste well with the marinade during cooking.
8. Small onions, slices of green pepper, mushrooms, and tomato halves can be alternated with the meat on the skewers, if desired.
9. Serve with boiled rice.

tips and notes
You can also use beef or chicken for kebabs. Suggest using cherry tomatoes on the skewers. They provide excellent flavor.
