Ingredients
| 1 1/2 | cups UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 3/4 | lb. pork loin |
| 3/4 | lb. lean ham diced |
| 1/2 | cup onion finely chopped |
| 1/4 | tsp. thyme |
| 2 | Tbsp. parsley chopped |
| 1 | clove garlic finely chopped |
| 4 | cups chicken broth |
| 1 | dash cayenne |
| 1 | bay leaf |
| 1/2 | tsp. chili powder |
| 2 | Tbsp. olive oil |
| salt to taste |
Instructions
1. Remove all fat from pork and cut into 1/2-inch cubes. Sauté onion, garlic and pork in olive oil until delicate brown. Add ham to pork mixture with thyme, parsley and bay leaf. Sauté until ham is delicate brown.
2. Add chicken broth; bring to boiling point. Add chili powder, salt, cayenne and rice.
3. Cover and cook slowly for 35 to 40 minutes until rice is tender; stir frequently.
4. Remove bay leaf and serve.
