Jambalaya Rice

Ingredients

1 1/2cups UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
3/4lb. pork loin
3/4lb. lean ham diced
1/2cup onion finely chopped
1/4tsp. thyme
2Tbsp. parsley chopped
1clove garlic finely chopped
4cups chicken broth
1dash cayenne
1 bay leaf
1/2tsp. chili powder
2Tbsp. olive oil
salt to taste

Instructions

1. Remove all fat from pork and cut into 1/2-inch cubes. Sauté onion, garlic and pork in olive oil until delicate brown. Add ham to pork mixture with thyme, parsley and bay leaf. Sauté until ham is delicate brown.
2. Add chicken broth; bring to boiling point. Add chili powder, salt, cayenne and rice.
3. Cover and cook slowly for 35 to 40 minutes until rice is tender; stir frequently.
4. Remove bay leaf and serve.

tips and notes
Substitute spicy cajun sausage for the ham, and add in shrimp for a more authentic jambalaya.
