Ingredients

1cup UNCLE BEN’S® Fast & Natural™ Whole Grain Instant Brown Rice
2 zucchini sliced diagonally
1cup sliced mushrooms
3 carrots julienned
3/4cup Italian salad dressing
Parmesan cheese grated or powdered (optional)

Instructions

1. Prepare vegetables according to preparation suggestions.
2. Cook rice according to package instructions.
3. Using 1/4 cup Italian salad dressing, sauté vegetables until tender crisp.
4. Stir in cooked rice and remaining Italian dressing.
5. Serve warm with Parmesan cheese.
