Ingredients
| 1 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 1/2 | lb. medium shrimp shelled and cleaned |
| 1 | bunch green onions chopped fine |
| 1/4 | tsp. garlic powder |
| 1/4 | cup cashews chopped |
| 1 | Tbsp. soy sauce |
| 1 | Tbsp. peanut oil |
| 1 | can low sodium chicken broth |
Instructions
1. Prepare rice according to package instructions, substituting chicken broth for water.
2. While the rice is cooking, mix the peanut oil, soy sauce, garlic powder and most of the green onion together.
3. Marinate the shrimp in mixture for 10-15 minutes in the refrigerator.
4. Heat the peanut oil in a skillet and sauté the shrimp with marinade until shrimp is cooked.
5. Serve shrimp over cooked rice and garnish with remaining green onions and cashews.
