Indonesian Shrimp and Rice

Ingredients

1cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
1/2lb. medium shrimp shelled and cleaned
1bunch green onions chopped fine
1/4tsp. garlic powder
1/4cup cashews chopped
1Tbsp. soy sauce
1Tbsp. peanut oil
1can low sodium chicken broth

Instructions

1. Prepare rice according to package instructions, substituting chicken broth for water.
2. While the rice is cooking, mix the peanut oil, soy sauce, garlic powder and most of the green onion together.
3. Marinate the shrimp in mixture for 10-15 minutes in the refrigerator.
4. Heat the peanut oil in a skillet and sauté the shrimp with marinade until shrimp is cooked.
5. Serve shrimp over cooked rice and garnish with remaining green onions and cashews.

tips and notes
Try adding chili flakes or minced Thai chilies to make this spicy if desired.
