Ingredients
| 1 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 1 | egg beaten |
| 1 | whole chicken |
| 4 | oz. ham minced |
| 1 | small onion finely chopped |
| 1 | tsp. mixed fresh herbs |
| 1 | clove garlic crushed |
| 2 | Tbsp. butter |
| 1/2 | lemon |
| salt and pepper to taste |
| 1 | Tbsp. curry powder |
| 1/2 | cup chicken stock |
Instructions
1. Preheat the oven to 350°F.
2. Cook rice according to package instructions.
3. Melt the butter in a pan, add the onion and cook until soft, but not brown, and then cool.
4. Mix the cooled onion with the rice, ham and herbs in a bowl. Add salt and pepper to taste and then the beaten egg.
5. Stuff the chicken with the rice mixture, sew up and truss neatly, then rub the chicken with the half lemon.
6. Melt the butter in a casserole and blend in the curry powder and crushed garlic and half the chicken stock. Add to this the trussed chicken.
7. Cover the casserole tightly and cook in the oven for about 1 hour, turning the chicken twice and adding extra stock if necessary.
8. Serve with a crisp salad.
