Hot Mushroom-Rice Soup

Ingredients

3/4cup UNCLE BEN’S® Instant Rice
1lb. sliced mushrooms
2Tbsp. grated parmesan cheese
1large onion coarsely chopped
2 cloves garlic minced
1/4tsp. dried oregano crushed
2tsp. vegetable oil
1can beef broth
2tsp. ground cumin
1/4cup picante sauce (medium) or salsa as desired

Instructions

1. Heat oil in large saucepan or Dutch oven; add mushrooms, onion and garlic.
2. Cover and cook 10 minutes, stirring occasionally.
3. Add remaining ingredients; except cheese. Bring to a boil.
4. Reduce heat, cover and simmer 5 minutes.
5. Sprinkle with cheese and serve.

Try adding additional vegetables to the soup such as corn and tomatoes.
