Ingredients
| 3/4 | cup UNCLE BEN’S® Instant Rice |
| 1 | lb. sliced mushrooms |
| 2 | Tbsp. grated parmesan cheese |
| 1 | large onion coarsely chopped |
| 2 | cloves garlic minced |
| 1/4 | tsp. dried oregano crushed |
| 2 | tsp. vegetable oil |
| 1 | can beef broth |
| 2 | tsp. ground cumin |
| 1/4 | cup picante sauce (medium) or salsa as desired |
Instructions
1. Heat oil in large saucepan or Dutch oven; add mushrooms, onion and garlic.
2. Cover and cook 10 minutes, stirring occasionally.
3. Add remaining ingredients; except cheese. Bring to a boil.
4. Reduce heat, cover and simmer 5 minutes.
5. Sprinkle with cheese and serve.
