Ingredients
| 2 | cups UNCLE BEN’S® Natural Whole Grain Brown Rice |
| 1 | can black beans rinsed and drained |
| 3/4 | cup shredded cheddar cheese |
| 1 1/2 | cups chopped onion |
| 1 | can diced tomato drained |
| 2 1/2 | tsp. cumin powder |
| 1 1/2 | Tbsp. chili powder |
| 1/4 | tsp. red pepper flakes or to taste |
Instructions
1. Cook the rice according to package directions adding the cumin and pepper flakes.
2. While the rice is cooking, mix together the black beans, tomatoes, onions and chili powder, and simmer 15 minutes or until thick.
3. Serve over the rice and top with the cheese.
