Herbed Mushrooms and Rice in Red Wine

Ingredients

3cups UNCLE BEN’S® Boil-In-Bag Rice
1 1/2cups fresh mushrooms sliced
1medium tomato chopped
1/4cup onion chopped
1 clove garlic minced
1tsp. salt
2Tbsp. olive oil
1 1/2Tbsp. fresh parsley chopped
1tsp. Worcestershire Sauce
6Tbsp. red wine

Instructions

1. Prepare rice according to package instructions and set aside.
2. In a medium sauté pan, stir together olive oil, onion, and garlic over medium-low heat until onion is translucent.
3. Add tomato to onion and stir. Add mushrooms to onion and increase heat, tossing frequently for about 2 minutes.
4. Add wine. It should instantly boil. Cook until 1/2 of the liquid has evaporated.
5. Add rice, Worcestershire sauce, and salt. Stir.
6. Garnish with parsley and serve.

Top with fresh grated Parmesan or Asiago cheese.
