| 1 | package UNCLE BEN’S® Long Grain & Wild Rice Herb Roasted Chicken |
| 4 | boneless skinless chicken breasts (6 oz.) |
| 2 | cups fresh or frozen green beans |
| 3 | Tbsp. salt free Italian herb spice blend (dried) |
| 3 | Tbsp. panko Japanese-style breadcrumbs |
| 4 | Tbsp. Dijon mustard |
| 1 | cup fresh button mushrooms cut in half |
| nonstick cooking spray |
Instructions
1. Prepare rice according to package directions.
2. Apply coating spray to large nonstick pan and heat over medium-high heat. Top each chicken breast with 1 tablespoon Dijon mustard. Combine the panko breadcrumbs and dry herbs. Sprinkle mixture on top of mustard. Place chicken in sauté pan, herb-crusted side down first. Sear for two minutes and turn chicken over. Reduce heat to medium and cook another 5 minutes or until chicken is cooked through. When chicken is almost cooked, add mushroom halves to pan. Steam green beans in microwave or stovetop.

For super-moist chicken breasts, use an oven-safe skillet and, after searing herb mixture and turning chicken over, place skillet with chicken in a 350 degree F oven for 6 to 8 minutes instead of the stovetop.
