Herb Crusted Chicken

Ingredients

1package UNCLE BEN’S® Long Grain & Wild Rice Herb Roasted Chicken
4 boneless skinless chicken breasts (6 oz.)
2cups fresh or frozen green beans
3Tbsp. salt free Italian herb spice blend (dried)
3Tbsp. panko Japanese-style breadcrumbs
4Tbsp. Dijon mustard
1cup fresh button mushrooms cut in half
nonstick cooking spray

Instructions

1. Prepare rice according to package directions.
2. Apply coating spray to large nonstick pan and heat over medium-high heat. Top each chicken breast with 1 tablespoon Dijon mustard. Combine the panko breadcrumbs and dry herbs. Sprinkle mixture on top of mustard. Place chicken in sauté pan, herb-crusted side down first. Sear for two minutes and turn chicken over. Reduce heat to medium and cook another 5 minutes or until chicken is cooked through. When chicken is almost cooked, add mushroom halves to pan. Steam green beans in microwave or stovetop.

tips and notes
For super-moist chicken breasts, use an oven-safe skillet and, after searing herb mixture and turning chicken over, place skillet with chicken in a 350 degree F oven for 6 to 8 minutes instead of the stovetop.
