Hearty Polish Soup

Ingredients

1/2cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
4slices bacon
1/2lb. pork cut into 1/2" cubes
1/2lb. beef cut into 1/2" cubes
1medium tomato chopped
3medium onion sliced
1lb. smoked Polish sausage sliced
garlic croutons
1tsp. garlic powder
8cups water
1/4tsp. pepper
2tsp. seasoned salt
1Tbsp. caraway seed
1/2tsp. paprika
2 beef bouillon cubes crushed

Instructions

1. In a Dutch oven, fry bacon ; drain on paper towels. Pour off all but 2 tablespoons bacon drippings.
2. Add onions, beef and pork. Cook until onion is tender, stirring often.
3. Add caraway seeds, seasoned salt, garlic powder, paprika, pepper, bouillon cubes and 2 cups of water. Cover.
4. Cook 1-1/2 hours stiring frequently. Add remaining water, rice, sausage and tomato. Bring to a boil and cover.
5. Simmer until beef and pork are tender, about 25 minutes.
6. Serve hot.

Top soup with bacon bits and croutons, and grated cheddar cheese if desired.
