Instructions
1. Cook rice according to package directions using butter and beef broth and adding enough water to make 2 ¼ cups of liquid.
2. Sprinkle vegetables (broccoli, carrot, green onion, mushrooms) with lemon juice and sauté just
until broccoli turn bright green.
3. Add cooked rice to vegetables, cover and simmer for 5 minutes or until all water is absorbed.
4. Turn into baking dish and cover with cheese. Place under broiler to completely melt cheese.
5. Serve warm.
