Grilled Pork Kabobs with Vegetable Mint Rice Pilaf

Ingredients

1 1/2cups UNCLE BEN’S® Fast & Natural™ Whole Grain Instant Brown Rice
1lb. pork tenderloin cubed for skewering
1/2cup zucchini sliced thin
2/3cup plain yogurt
1/2cup carrot sliced thin
3Tbsp. mint leaves chopped
3 cloves garlic minced
2tsp. lime juice
1 1/2cups chicken broth

Instructions

1. Thread pork onto 4 metal skewers.
2. In a small bowl combine yogurt, garlic, mint and lime juice. Set aside 1/3 cup and brush the kabobs with the remaining mixture.
3. In a medium saucepan, combine the rice, chicken broth and carrots. Cover and bring to a boil, reduce heat and simmer for 8 minutes. Then add the zucchini and continue cooking for 2 minutes.
4. Finish by stirring in the reserved yogurt mix.
5. While the rice is cooking, grill or broil the kabobs 6-8 minutes, turning once, until golden brown.
6. Serve kabobs over rice.
