Ingredients
| 1 1/2 | cups UNCLE BEN’S® Fast & Natural™ Whole Grain Instant Brown Rice |
| 1 | lb. pork tenderloin cubed for skewering |
| 1/2 | cup zucchini sliced thin |
| 2/3 | cup plain yogurt |
| 1/2 | cup carrot sliced thin |
| 3 | Tbsp. mint leaves chopped |
| 3 | cloves garlic minced |
| 2 | tsp. lime juice |
| 1 1/2 | cups chicken broth |
Instructions
1. Thread pork onto 4 metal skewers.
2. In a small bowl combine yogurt, garlic, mint and lime juice. Set aside 1/3 cup and brush the kabobs with the remaining mixture.
3. In a medium sauce pan, combine the rice, chicken broth and carrots. Cover and bring to a boil, reduce heat and simmer for 8 minutes. Then add the zucchini and continue cooking for 2 minutes.
4. Finish by stirring in the reserved yogurt mix.
5. While the rice is cooking, grill or broil the kabobs 6-8 minutes, turning once, until golden brown.
6. Serve kabobs over rice.
