Ingredients
| 3 | cups UNCLE BEN’S® Boil-In-Bag Rice |
| 2 | oz. feta cheese crumbled |
| 1 | can white beans drained |
| 1 | can black olives sliced |
| 2 | Tbsp. lemon juice |
| 2 | Tbsp. dill weed |
| 1 | jar artichoke hearts drained and chopped |
| 6 | flour tortillas |
Instructions
1. Cook rice according to package instructions.
2. Toss together feta cheese, artichoke hearts, white beans, lemon juice, dill weed, olives and rice in a medium mixing bowl.
3. Spoon 2 tablespoons of mixture onto tortilla. Roll tightly.
4. Cut in half and serve with fruit.
Note: 3/4 cup of black olives and artichoke hearts used for nutritional analysis.
