Ingredients
| 1 | cup UNCLE BEN’S® Fast & Natural™ Whole Grain Instant Brown Rice |
| 1/2 | cup raisins |
| 2 | Tbsp. milk |
| 1/2 | cup butter |
| 1 | medium egg |
| 1/4 | cup peanuts chopped |
| 3/8 | tsp. cinnamon |
| 1/4 | tsp. baking soda |
| 1 | tsp. vanilla |
| 1/4 | cup maple syrup |
| 1/4 | tsp. nutmeg |
| 1/2 | cup brown sugar |
| 1/8 | tsp. salt |
| 1 | cup flour |
Instructions
1. Cook rice according to package instructions and set aside
2. Cream butter, brown sugar, syrup, egg and salt together in a medium-sized mixing bowl until well blended and smooth.
3. In a cup or small bowl, mix together milk and baking soda.
4. Stir into butter mixture until smooth.
5. Mix flour, vanilla, cinnamon and nutmeg together with butter mixture until well blended.
6. Stir in rice and raisins and peanuts then drop by teaspoon onto non-stick baking pan.
7. Bake at 375F for 10 minutes.
8. Remove from pan immediately and place on a cooling rack for at least 15 minutes.
