Grandma Ferguson's Rice Cookies

Ingredients

1cup UNCLE BEN’S® Fast & Natural™ Whole Grain Instant Brown Rice
1/2cup raisins
1/2cup butter
2Tbsp. 1% milk
1medium egg
1/4cup peanuts chopped
3/8tsp. cinnamon
1/4tsp. baking soda
1tsp. vanilla
1/2cup brown sugar
1/8tsp. salt
1cup flour
1/4cup maple syrup
1/4tsp. nutmeg

Instructions

1. Cook rice according to package instructions and set aside
2. Cream butter, brown sugar, syrup, egg and salt together in a medium-sized mixing bowl until well blended and smooth.
3. In a cup or small bowl, mix together milk and baking soda.
4. Stir into butter mixture until smooth.
5. Mix flour, vanilla, cinnamon and nutmeg together with butter mixture until well blended.
6. Stir in rice, raisins and peanuts then drop by teaspoon onto nonstick baking pan.
7. Bake at 375°F for 10 minutes.
8. Remove from pan immediately and place on a cooling rack for at least 15 minutes.
