Ingredients
| 1 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 1 | lb. ground beef |
| 1 | medium tomato chopped |
| 1 | medium cucumber peeled and chopped |
| 1 | medium green pepper chopped |
| 1 | medium onion sliced |
| 1 | clove garlic minced |
| 2 1/2 | cups tomato juice |
| 1/4 | tsp. hot pepper sauce |
| 1/4 | cup red wine vinegar |
| 1/4 | tsp. pepper |
| 2 1/2 | tsp. salt |
Instructions
1. In a large skillet, brown beef and drain fat. Add rice, onion, garlic, tomato juice, vinegar, salt, pepper and hot pepper sauce. Stir. Bring to a boil.
2. Reduce heat and cover tightly. Simmer 20 minutes.
3. Remove from heat. Stir in green pepper, tomato and cucumber into cooked rice. Cover and heat about 5 minutes.
