Gazpacho Skillet

Ingredients

1cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
1lb. ground beef
1medium tomato chopped
1medium cucumber peeled and chopped
1medium green pepper chopped
1medium onion sliced
1 clove garlic minced
2 1/2cups tomato juice
1/4tsp. hot pepper sauce
1/4cup red wine vinegar
1/4tsp. pepper
2 1/2tsp. salt

Instructions

1. In a large skillet, brown beef and drain fat. Add rice, onion, garlic, tomato juice, vinegar, salt, pepper and hot pepper sauce. Stir. Bring to a boil.
2. Reduce heat and cover tightly. Simmer 20 minutes.
3. Remove from heat. Stir in green pepper, tomato and cucumber into cooked rice. Cover and heat about 5 minutes.

tips and notes
May serve warm or cold, classically it would be served cold.
