Ingredients
| 1 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 1/4 | cup green bell pepper diced |
| 1/4 | cup green onions |
| 1 | tomato peeled, seeded, diced |
| 1/2 | cup cucumber peeled, seeded, diced |
| 1/4 | cup shallot minced |
| 1/4 | cup chopped parsley |
| mixed salad greens |
| 2 | cloves garlic minced |
| 3 | Tbsp. lemon juice |
| 1/2 | tsp. sugar |
| 1/3 | cup olive oil |
| salt and pepper to taste |
Instructions
1.Cook rice according to package instructions. Set aside and chill.
2. In a large bowl, combine the cooked rice, cucumbers, parsley, shallots, bell pepper and tomato and toss lightly.
3. In a jar, combine the remaining ingredients except the salad greens, cover and shake well.
4. Pour over the rice and vegetable mixture and toss lightly.
5. Chill, covered, for several hours and then serve on a bed of crisp, fresh, salad greens.
