Gazpacho Salad

Ingredients

1cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
1/4cup green bell pepper diced
1/4cup green onions
1 tomato peeled, seeded, diced
1/2cup cucumber peeled, seeded, diced
1/4cup shallot minced
1/4cup chopped parsley
mixed salad greens
2 cloves garlic minced
3Tbsp. lemon juice
1/2tsp. sugar
1/3cup olive oil
salt and pepper to taste

Instructions

1.Cook rice according to package instructions. Set aside and chill.
2. In a large bowl, combine the cooked rice, cucumbers, parsley, shallots, bell pepper and tomato and toss lightly.
3. In a jar, combine the remaining ingredients except the salad greens, cover and shake well.
4. Pour over the rice and vegetable mixture and toss lightly.
5. Chill, covered, for several hours and then serve on a bed of crisp, fresh, salad greens.

tips and notes
Toss with greens if preferred and serve as a side salad or main meal.
