Festive Mediterranean Lamb

Ingredients

1box UNCLE BEN’S® Long Grain & Wild Rice Original Recipe
1/4 red bell pepper
1/4 yellow bell pepper
1/4 green bell pepper
4 lamb chops (3 oz.)
1/2cup red onion
4 cloves garlic
2Tbsp. butter or margarine
1jar marinated artichoke hearts
2 1/3cups water
1/2cup low-sodium marinade (e.g. Mrs. Dash's Zesty Garlic Herb)

Instructions

1. Pour marinade over lamb chops and marinate for 20 minutes.
2. In a skillet, combine rice, seasoning packet and all remaining ingredients.
3. Cook according to package directions.
4. Grill or broil the lamb chops as desired and serve over rice.
5. Garnish with rosemary or mint sprig.

tips and notes
Finely chop rosemary and season the lamb chops after removing from marinade and before grilling.
