Ingredients
| 1 | box UNCLE BEN’S® Long Grain & Wild Rice Original Recipe |
| 1/4 | red bell pepper |
| 1/4 | yellow bell pepper |
| 1/4 | green bell pepper |
| 4 | lamb chops (3 oz.) |
| 1/2 | cup red onion |
| 4 | cloves garlic |
| 2 | Tbsp. butter or margarine |
| 1 | jar marinated artichoke hearts |
| 2 1/3 | cups water |
| 1/2 | cup low-sodium marinade (e.g. Mrs. Dash's Zesty Garlic Herb) |
Instructions
1. Pour marinade over lamb chops and marinate for 20 minutes.
2. In a skillet, combine rice, seasoning packet and all remaining ingredients.
3. Cook according to package directions.
4. Grill or broil the lamb chops as desired and serve over rice.
5. Garnish with rosemary or mint sprig.
