Ingredients

1/2lb cooked shrimp
1cup cooked ham diced
2medium tomatoes coarsely chopped
1/2medium green pepper cut into 1" x 1/4" strips
1 clove garlic
1/2tsp. red pepper sauce
4 green onions with tops sliced
2 1/4cups water
2tsp. salt
1/4cup vegetable oil

Add in some mayonnaise and Dijon mustard to bind together and give a tangy bite.

Instructions

1. Cook rice according to package instructions with 1 tsp. salt. Remove from heat. Let stand until all liquid is absorbed, about 5 minutes.
2. Transfer rice to large bowl. Combine oil, remaining salt, garlic, and red pepper sauce mixing well; stir into rice.
3. Stir in shrimp, ham, onions and green pepper.
4. Chill at least 3 hours. Stir in tomatoes to serve.
