Ingredients
| 1 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 1/2 | lb cooked shrimp |
| 1 | cup cooked ham diced |
| 2 | medium tomatoes coarsely chopped |
| 1/2 | medium green pepper cut into 1" x 1/4" strips |
| 1 | clove garlic |
| 1/2 | tsp. red pepper sauce |
| 4 | green onions with tops sliced |
| 2 1/4 | cups water |
| 2 | tsp. salt |
| 1/4 | cup vegetable oil |
Add in some mayonnaise and Dijon mustard to bind together and give a tangy bite.

Instructions
1. Cook rice according to package instructions with 1 tsp. salt. Remove from heat. Let stand until all liquid is absorbed, about 5 minutes.
2. Transfer rice to large bowl. Combine oil, remaining salt, garlic, and red pepper sauce mixing well; stir into rice.
3. Stir in shrimp, ham, onions and green pepper.
4. Chill at least 3 hours. Stir in tomatoes to serve.
