Ingredients
| 1 1/2 | cups UNCLE BEN’S® Instant Rice |
| 3/4 | lb. boneless skinless chicken breast |
| 1 | medium onion chopped |
| 1 | medium green bell pepper chopped |
| 1 | can tomatoes and chilies diced |
| 1 | clove garlic minced |
| 2 | tsp. olive oil |
| 1/4 | tsp. pepper |
| 1/4 | tsp. paprika |
Instructions
1. Cut chicken into thin strips. Sprinkle with paprika, salt and pepper.
2. Heat oil in 10-inch skillet over medium heat.
3. Cook chicken, onion, green pepper and garlic in oil until tender, about 4 minutes, stirring frequently.
4. Drain tomatoes, reserving liquid. Add water to liquid to equal 1-1/2 cups. Add liquid to skillet; bring to a boil.
5. Stir in rice and reserve tomatoes. Cover and remove from heat. Let stand until all liquid is absorbed, about 5 minutes.
