Easy Spicy Chicken and Rice

Ingredients

1 1/2cups UNCLE BEN’S® Instant Rice
3/4lb. boneless skinless chicken breast
1medium onion chopped
1medium green bell pepper chopped
1can tomatoes and chilies diced
1 clove garlic minced
2tsp. olive oil
1/4tsp. pepper
1/4tsp. paprika

Instructions

1. Cut chicken into thin strips. Sprinkle with paprika, salt and pepper.
2. Heat oil in 10-inch skillet over medium heat.
3. Cook chicken, onion, green pepper and garlic in oil until tender, about 4 minutes, stirring frequently.
4. Drain tomatoes, reserving liquid. Add water to liquid to equal 1-1/2 cups. Add liquid to skillet; bring to a boil.
5. Stir in rice and reserve tomatoes. Cover and remove from heat. Let stand until all liquid is absorbed, about 5 minutes.

If more spice is desired, try adding some minced chili, serrano or jalapeño when cooking the onion and pepper.
