East Indian Orange Chicken

Ingredients

1cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
6 chicken breast halves, boneless and skinless
1 1/2cups orange juice
1Tbsp. dry mustard
fresh parsley chopped
3/4cup water
1 1/4tsp. salt
1/4tsp. pepper
2tsp. curry powder

Instructions

1. Combine curry powder, 1/2 teaspoon salt and pepper. Sprinkle over chicken; rub seasonings onto top and bottom surfaces of each chicken piece and set aside.
2. In 10-inch skillet, combine orange juice, rice, water, mustard and remaining 3/4 teaspoon salt; mix well.
3. Arrange chicken pieces over rice. Bring to a boil. Cover and simmer 20 minutes.
4. Remove from heat and let stand covered until liquid is absorbed, about 5 minutes. Sprinkle with parsley.

tips and notes
Toast almonds in bottom of pan before adding in the spices, liquid and rice. This gives a nice crunchy and nutty flavor.
