Ingredients
| 1 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 8 | oz. duck shredded or sliced |
| 2 | oranges in segments |
| 1 | tsp. orange zest |
| 1 | medium onion chopped |
| 1/2 | cup almond slivers lightly toasted |
| salt and pepper to taste |
| 1 | Tbsp. chives chopped |
| 2 1/4 | cups water |
| 1 | Tbsp. vegetable oil |
| 1 | tsp. parsley |
| 1 | tsp. oregano |
| 1 | tsp. turmeric |
Instructions
1. Heat oil in large saucepan. Stir in onion, parsley, oregano, rice and turmeric. Cook for 1 minute.
2. Add water and orange zest and. Season to taste and bring to the boil, stirring constantly. Reduce the heat and simmer for 10 minutes.
3. Add duck slices and simmer further for 5 minutes, or until rice is tender and water is absorbed.
4. Stir orange segments, almonds and chives into rice and pile onto a serving plate. Serve hot.
