Ingredients
| 1 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 1 | lb. prawns cooked |
| 1 | banana |
| 1 | medium apple peeled and chopped |
| 1 | medium onion chopped |
| 1 | clove garlic minced |
| 1/4 | cup butter |
| 1/4 | tsp. ground ginger |
| 1/2 | cup 1% milk |
| 1 | Tbsp. lemon juice |
| 2 | Tbsp. flour |
| 1 | Tbsp. curry powder |
| 1/2 | cup coconut flakes toasted |
| salt to taste |
| 2 1/4 | cups water (to prepare rice) |
Instructions
1. Prepare the rice according to package instructions.
2. Stir the coconut into the hot cooked rice and keep warm.
3. Meanwhile, in a frying pan, cook the onion, apple and garlic in 1/4 cup of butter until onion is tender, but not brown.
4. Add the curry powder, stir and cook 2-3 minutes, being careful that the curry powder does not burn.
5. Stir in the flour, ginger, then add the milk.
6. Cook until the sauce is thickened, stirring constantly.
7. Add the prawns and the lemon juice and heat thoroughly.
8. Serve the rice with the prawns and sauce, then top with the chopped banana.

If you desire, you can also make coconut prawns with curried rice simply by adding the curry to the rice when cooking and coconut milk instead of regular milk. At the end, stir in the toasted coconut flakes. Same great flavors just in the opposite form.
