Cuban Black Beans and Rice with Ham

Ingredients

1cup UNCLE BEN’S® Instant Rice
1lb. lean ham diced
1can black beans (15 oz.) drained
1medium onion minced
2large tomatoes minced
3 cloves garlic minced

Instructions

1. Cook the rice according to package instructions.
2. In a skillet, sauté the garlic, onion and ham, until the onions are soft and lightly golden. Add beans and bring to a simmer, cook for 2-3 minutes. Stir in tomato.
3. Serve over rice.

tips and notes
Try substituting your favorite sausage for the ham. Sun-dried tomato, pesto, chicken and apple, spicy Cajun, etc.
