Ingredients
| 2 | cups UNCLE BEN’S® Boil-In-Bag Rice |
| 1/2 | lb. canned pineapple chunks |
| 1/2 | lb. shrimp (medium or large) |
| 1 | Tbsp. minced garlic |
| 1/2 | red bell pepper |
| 1/2 | green bell pepper diced |
| 1/2 | onion chopped |
| 2 | Tbsp. raisins |
| 2 | cups mild salsa |
| 1 | Tbsp. vegetable oil |
Instructions
1. Prepare rice according to package instructions using microwave or stove top, but cook for only 8 minutes. Remove from bag and set aside.
2. In a large microwavable bowl, mix together the oil, onion and the peppers. Cover with plastic wrap, pierce several holes and microwave on high for 2-1/2 minutes.
3. Mix in the rice, shrimp, pineapple, raisins, salsa and garlic salt.
4. Cover with plastic wrap, pierce and microwave for 3 minutes.
5. Remove and stir well. Return to microwave and continue to cook for 3 to 5 minutes or until all shrimp are cooked.
6. Toss again and serve.
