Ingredients
| 6 | cups UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 21 | cups milk |
| 6 | cups whipped topping |
| 1/3 | cup butter |
| 2 3/4 | cups sugar |
| 1/4 | cup cornstarch |
| 2 | tsp. vanilla extract or almond extract |
| 2 | tsp. salt |
Instructions
1. In a saucepan combine the rice, 2 cups sugar, 15 cups milk, butter and salt. Bring mixture to the boil, stirring frequently, reduce heat, cover and cook 20 - 25 minutes. Stir occasionally.
2. Combine remaining sugar and cornstarch, then add remaining milk and extract.
3. Pour the starch mixture slowly into the rice mixture, stirring constantly.
4. Increase heat to MEDIUM and bring mixture back to a slow boil. Remove from heat and cool completely.
5. Whip cream with vanilla and fold into chilled, cooked rice mixture.
6. To serve: Spoon into individual dessert glasses/plates. Finish as desired
