Cranberry Stuffing En Casserole

Ingredients

1box UNCLE BEN’S® Long Grain & Wild Rice Original Recipe
1cup cranberries (fresh)
1cup celery sliced
1/2cup cashews (salted) chopped
1Tbsp. butter
1tsp. orange zest
1/2cup sugar
2 1/2cups water

Instructions

1. Preheat oven to 350 degrees F.
2. Cook the rice according to package instructions.
3. Stir cranberries into cooked rice. Heat, uncovered, until berries begin to pop, about 5 minutes.
4. Stir in celery, sugar, cashews and orange zest. Spoon into a shallow 1-1/2 quart casserole dish. Cover tightly.
5. Place in oven and heat thoroughly, 325 degrees F, 30 to 40 minutes.

Can be used to stuff whole chickens or turkeys as well as individual pieces of meat for individually prepared servings.
