Ingredients
| 1 1/2 | cups UNCLE BEN’S® Instant Rice |
| 1 1/2 | cups cooked chicken chopped |
| 1/2 | cup bell pepper cut into 1" x 1/4" strips |
| 1/4 | cup green onion thinly sliced |
| 1 1/2 | cups chicken broth |
| 1 | tsp. honey |
| 1 | Tbsp. Dijon mustard |
Instructions
1. Bring broth and peppers to a boil in saucepan.
2. Stir in rice. Remove from heat. Cover tightly and let stand until all liquid is absorbed, about 5 minutes.
3. While rice is standing, combine chicken, mustard and honey.
4. Stir rice with green onions; heat through.
5. Serve chicken over rice.
