Confetti Chicken and Pepper Rice

Ingredients

1 1/2cups UNCLE BEN’S® Instant Rice
1 1/2cups cooked chicken chopped
1/2cup bell pepper cut into 1" x 1/4" strips
1/4cup green onion thinly sliced
1 1/2cups chicken broth
1tsp. honey
1Tbsp. Dijon mustard

Instructions

1. Bring broth and peppers to a boil in saucepan.
2. Stir in rice. Remove from heat. Cover tightly and let stand until all liquid is absorbed, about 5 minutes.
3. While rice is standing, combine chicken, mustard and honey.
4. Stir rice with green onions; heat through.
5. Serve chicken over rice.

tips and notes
May use whole grain mustard in place of Dijon if preferred.
