Instructions
1. Cook rice according to package instructions, set aside and cool
2. Set aside 2 tablespoons of sugar.
3. Grate the orange to obtain the zest. Do the same with the lemon and lime.
4. Squeeze the orange, lemon, and lime halves to obtain the juice. Set aside.
5. Cream together rice, butter, sugar, zest of orange, zest of lemon and zest of lime, until smooth.
6. Beat in yolks one at a time, until smooth.
7. Sift together flour, baking powder and salt and mix thoroughly into rice mixture.
8. In a separate bowl, beat egg whites until stiff.
9. Gradually blend in 1/2 cup sugar.
10. Stir in 1/4 of whites to lighten mixture, then fold in remaining whites.
11. Pour batter into well buttered 8" x 8" pan and bake at 350 degrees for 35 to 40 minutes, or until a toothpick inserted comes out clean.
12. For topping, mix together juices and 2 Tbsp. sugar and drizzle onto cake as it cools.
