Chorizo and Corn Paella

Ingredients

2cups UNCLE BEN’S® Fast & Natural™ Whole Grain Instant Brown Rice
1/2lb. chorizo
1/2small yellow onion diced
110 oz. box frozen corn
1/2 green bell pepper diced
4cups chicken stock
1can diced green chilies

Instructions

1. In a skillet sauté and brown the chorizo, onion, pepper, corn and chiles and set aside.
2. Add the rice and chicken stock and bring to a boil.
3. Reduce heat to a simmer; cover for 10 minutes.
4. Combine chorizo and vegetable mixture with the rice, and combine thoroughly.
5. Add salt and pepper to taste.
