Chinese Fried Rice

Ingredients

1 1/2cups UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
1/2cup green onions sliced
1/2cup cooked pork loin julienne strips
1/4cup cooked ham julienne strips
2 eggs beaten
2Tbsp. soy sauce
1/2tsp. sugar
3 1/4cups water
1/2tsp. salt
3Tbsp. vegetable oil

Instructions

1. Cook rice with water and 1/2 teaspoon salt according to package directions (omitting butter); chill thoroughly.
2. Heat 1/2 of the oil in a large skillet. Add eggs. Cook 1 minute, stirring slightly. Remove from pan. Spread on flat plate in a thin layer and cool.
3. Cut meat into thin strips. Add remaining oil to skillet and heat.
4. Add onions and meat. Cook and stir until heated.
5. Add cold rice; stir well to coat rice with oil. Stir in eggs, soy sauce and sugar; heat thoroughly.

Can substitute chicken for the pork if desired.
