Chinese Chicken Salad

Ingredients

1cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
1cup cooked chicken chopped
1small red bell pepper cut into strips
3/4cup napa cabbage
1cup fresh spinach shredded
1/4cup green onions thinly sliced
1/2cup water chestnuts sliced
1Tbsp. soy sauce
2Tbsp. dry sherry
1/4tsp. sesame oil
toasted sesame seeds
1Tbsp. vegetable oil

Instructions

1. Cook rice according to package instructions.
2. In medium bowl, combine rice, chicken, water chestnuts, green onions and red pepper.
3. To make dressing: In small bowl, combine sherry, oil, soy sauce and sesame oil; mix well.
Add dressing to rice mixture; toss lightly to mix. Cover; refrigerate until serving time, at least 2 hours.
4. To serve: Toss napa cabbage and spinach with rice mixture; toss lightly to mix. Garnish with sesame seeds.
