Ingredients
| 1 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 1 | cup cooked chicken chopped |
| 1 | small red bell pepper cut into strips |
| 3/4 | cup napa cabbage |
| 1 | cup fresh spinach shredded |
| 1/4 | cup green onions thinly sliced |
| 1/2 | cup water chestnuts sliced |
| 1 | Tbsp. soy sauce |
| 2 | Tbsp. dry sherry |
| 1/4 | tsp. sesame oil |
| toasted sesame seeds |
| 1 | Tbsp. vegetable oil |
Toss with toasted chopped peanuts or almonds.

Instructions
1. Cook rice according to package instructions.
2. In medium bowl, combine rice, chicken, water chestnuts, green onions and red pepper.
3. To make dressing: In small bowl, combine sherry, oil, soy sauce and sesame oil; mix well.
Add dressing to rice mixture; toss lightly to mix. Cover; refrigerate until serving time, at least 2 hours.
4. To serve: Toss napa cabbage and spinach with rice mixture; toss lightly to mix. Garnish with sesame seeds.
